Ingredients

Instructions

  1. Prepare the fries by filling a large bowl with cold water and lemon juice. Peel and slice the potatoes into 1/4-inch thick strips. Place the slices in the cold water.
  2. Rinse the fries in clear water to remove excess starch. Chill the fries in water and lemon juice mixture in the refrigerator for 30 minutes.
  3. Heat oil in a large pan and line baking sheets with thick paper. Drain and dry the fries completely using a kitchen towel.
  4. Cook the potatoes in hot oil until soft and golden. Remove from oil and let them drain on the prepared baking sheets. Allow them to stand at room temperature for 15-20 minutes.
  5. Increase oil temperature and cook the fries until golden brown and crispy. Drain on clean paper bags and season with salt.
  6. Serve the fries in parchment paper cones topped with the sauce of your choice.
  7. For the curry ketchup, heat olive oil in a saucepan. Cook onion until soft, then add salt and garlic. Cook until fragrant and add curry powder, paprika, chili powder, and cinnamon. Cook until spices are fragrant and toasted.
  8. Add ketchup, Worcestershire sauce, apple cider vinegar, and honey to the mixture. Simmer for 15 minutes, then let it cool slightly. Purée the mixture using an immersion blender and adjust consistency with water if needed. Let it cool completely.
  9. Top the fries with the curry ketchup, mayonnaise, and chopped onion.
  10. For the garlic chipotle mayo, cook garlic cloves in a dry skillet until golden. Transfer to a food processor and add mayonnaise, lemon juice, chipotle peppers, and salt. Process until combined. Chill for at least 1 hour.
  11. Top the fries with the garlic chipotle mayo.
  12. Prepare the pesto mayo by whisking together mayonnaise, pesto, and lemon juice. Chill for at least 30 minutes.
  13. Top the fries with the pesto mayo.
  14. Enjoy!
