  1. Line a baking sheet with parchment paper.
  2. Divide the sugar evenly between 6 small bowls, using 2 tablespoons per bowl.
  3. Add 1-2 drops of red, orange, yellow, green, blue, and purple food coloring to each bowl of sugar. Stir with a clean fork until the sugars have a sandy texture. Note: Gel food coloring is recommended for more stable colors. Use only 1-2 drops per bowl.
  4. In a medium nonstick saucepan with a lid, combine 1 teaspoon of coconut oil and 2 popcorn kernels. Cover and place over medium-high heat. Once the kernels pop, reduce the heat to medium and add 2 tablespoons of popcorn kernels and 1 bowl of colored sugar. Immediately cover the pan and shake to combine. Continuously shake the pan while the popcorn pops to prevent burning. After the pops are more than 3 seconds apart, remove the pot from heat. Carefully remove the lid away from your body and pour the popcorn onto the prepared baking sheet.
  5. Evenly sprinkle ¼ teaspoon of salt over the hot kettle corn. Allow the popcorn to cool completely, then transfer it to a bowl. Repeat the process with the remaining colors, replacing the parchment paper when necessary.
  6. Combine all of the popcorn in a large bowl and toss to distribute the colors evenly.
  7. Serve immediately or store in an airtight container for up to 2 days.
  8. Enjoy!
