- In a glass bowl, combine water and yeast. Allow the yeast to dissolve in the water for a few minutes.
- Add the remaining ingredients for the starter and mix thoroughly until well combined.
- Cover the bowl with clear wrap, leaving a little breathing space. Place it in a dark area at room temperature. Stir the starter every 12 hours until ready to make the dough. You will notice it rising and shrinking each day, with visible bubbles indicating the yeast is active!
- On the fifth day, mix all the dough ingredients in a bowl. Knead for 10 minutes on low speed if using a machine, or for 20 minutes by hand until the dough is stretchy and non-sticky.
- While the dough is being kneaded, store your starter for future use. It can be kept in the refrigerator and fed once a week with a teaspoon of sugar. To replenish the starter, add 1 cup of flour (125g) and ½ cup of water (120ml), mix well, and return it to the fridge. Allow it to reach room temperature overnight before using in the dough preparation.
- Transfer the kneaded dough to a large floured bowl and cover with a towel. Let it rise for 12 hours.
- Transfer the risen dough onto a floured surface and knead lightly for a few minutes. Place it in a floured proofing basket or medium-sized bowl, sprinkle with flour, and let it rise for another 4 hours.
- Preheat the oven to 480°F (250°C).
- Gently flip the dough onto a piece of parchment paper, then transfer both the dough and paper into a large cast-iron Dutch oven.
- Score the top of the bread with desired patterns.
- Cover with the lid and bake for 30 minutes.
- Remove the lid and bake for an additional 15 minutes or until the crust turns golden brown.
- Transfer the bread onto a cooling rack and allow it to rest for an hour. Tap the bottom of the bread and listen for a hollow sound.
