Fuddruckers has a cool name… but it doesn’t have very great vegan options. The veggie burger is sadly not even vegan. That said, they do have some vegan sides if you find yourself there.
Vegan options at Fuddruckers:

Putting together a vegan menu for Fuddruckers was difficult. Their website doesn’t offer ingredient lists or even allergen information. I contacted Fuddruckers to ask if they have an allergen menu available at all, and they said they do not.
I did my best with my 13 years of vegan dining experience to sort through the vegan options. But I recommend double checking the following information in person at your own Fuddruckers location.
Sides
Here are the typical vegan sides at Fuddruckers to choose from:

Salad (No Croutons, No Cheese)
At the least, you can get a side salad made vegan—ask for no croutons and no cheese to make sure it’s vegan.
You could also customize one of the salad entrees, but you’d have to remove quite a bit from most of them. If you have them remove meat and cheese, be sure to ask for something added back in instead, like avocado or nuts.
Vegan salad dressings: Balsamic Vinaigrette and possibly others (ask about the Raspberry Vinaigrette or Italian Dressings).

The Fuddruckers veggie burger appears to only be vegetarian, not vegan. That said, I could not find any official source to cite this, so you may want to check at your specific Fuddruckers location.
Which Buns Are Vegan at Fuddruckers?
Fuddruckers offers 3 buns: White, Wheat, or Gluten-Free. Without access to ingredients lists or allergen info, I was unable to determine for sure if these are vegan.
Based on my research of other restaurants, I would guess that the White bun is the most likely to be vegan. Wheat buns more often contain honey, and gluten-free buns sometimes contain egg.
I contacted Fuddruckers to ask about their allergen menu. Their response said, “We apologize but at this time we do not have an allergy menu available. We are working diligently to make that information available.”

Whole-Food Plant-Based Options
Since Fuddruckers is so low on vegan options to begin with, it’s no surprise that their whole-food plant-based options are even more meager.
That said, if you’re trying to avoid processed foods along with animal products, you can still get the apple slices and a simple vegan salad with avocado and pico de gallo (make sure to order without croutons or cheese).
